Healthy ice cream? Yes please! The sweet creaminess in this recipe comes from bananas. You can use almond, cashew, or other nut butter instead of peanut butter if you’d prefer.
PB & CHOCOLATE NICE CREAM
(makes 4 servings)
- 4 frozen bananas, peeled and sliced
- ¼ cup (25 g) raw cocoa powder
- 2 Tbsp peanut butter (or other nut butter like almond)
- 2-3 Tbsp milk, as needed (dairy or alternative)
Place bananas, cocoa powder, and peanut butter in a high-powered blender and blend on high speed. If necessary, add a small amount of milk to get the blender moving again. Use as little as possible! Blend for a total of 2-3 minutes, until the mixture reaches your desired consistency.
You can eat immediately or if you prefer firmer nice cream, scrape the contents into a freezer-proof container and freeze for a couple of hours.
